#SALMON / #SWEETPOTATO MASH
Sweet potato mash
Scrub 1 sweet potato per person, for 30 seconds each
cut in quarters add to boiling water ~15 mins.
Cut up and break apart your #Broccoli
#DRESSING for veggies
chop chili (lose the seeds)
1/2 clove crushed garlic
1 Tbsp olive oil
1 Tsp Sesame seed oil
1 Tbsp Soy sauce
1 Tsp lemon juice
SALMON
Salt and pepper and olive oil on scaled side.
2 slices of pancetta (Italian bacon) per person in a pan
Add salmon to pan skin side down for 95% of the cooking...(4 1/2 to 5 mins)
Sprinkle ground fennel seed over the flesh side of salmon
Add lemon zest (just a little bit)
Add #veggies to boiling water (broccoli) 3-4 mins
SWEET POTATO
Drain when cooked,
ON A CHOPPING BOARD
1 Tsp lemon juice
1/2 chopped chili
Fresh chopped coriander
1 Tbsp. Olive oil
Salt n pepper to taste
THEN
1 Tbsp. #MangoChutny
Put the sweet potatoes on top of the mixture and thoroughly chop up the potatoes over the above mixture
Done..place potatoes mix at the base of the serving dish...
Remove veggies
Flip #fish for 10 seconds
ADD fresh chopped #coriander leaves over the #potatoes
ADD #fish
ADD chopped #Pancetta
As your sidebars ADD #broccoli to the dressing and mix
#Serve!!
Cooked and done in 30 minutes!!
