Our Meet and Eat was a GREAT success last night…
capping off the evening was a MUCH anticipated weigh-in with Rochelle…
DOWN 104lbs! She ONLY started with us in April of this year!

Talapia Dish
Ok…This is DEElish!
Peel parsnip and dice. Place in a small pot and cover with milk
add 1 finely diced clove of garlic and 3 sprigs of Thyme.
Bring a boil then switch to simmer until it passes the fork test…easily poking through (approx 20-30 mins)
While that is happening, cut up broccoli and steam for 10 minutes.
Finely slice up 1/2 yellow pepper and set aside.
Take a 4 1/2 oz fillet of Talapia and season with Kosher salt and freshly ground pepper.
Finely Chop up;
Marjoram
Thyme
Fennel
and sprinkle over fish
Add lemon juice
Season both sides of the Talapia
In a pan add 1 Tsp Olive Oil
Add Talapia to the pan and cook for approx 2-3 mins each side.
Back to the Parsnip, drain the milk out BUT into a bowl,
get rid of the thyme sprigs and return the parsnip to the pot,
add kosher salt and ground pepper…add a VERY thin slice of butter and mash (or whip in a food blender)
add a little of the milk back to get a creamy texture..but just a little is needed.
Leave this mixture in the pot on simmer til you’re ready to serve.
Once done cooking the Talapia, remove from the pan but place them into another pan on simmer until you’re ready to serve.
Back in the same pan you fried the fish in, add the yellow peppers and the steamed broccoli with seasoning (salt n pepper).
Stir fry for approx 3 mins
Place a dollop of the parsnip on a plate and place the fillet of Talapia over the parsnip.
Add the peppers and broccoli on the side and ENJOY!
